Blender Cherry Clafoutis

An incredibly easy to make and super delicious dessert for the summer!

This Cherry Clafoutis is a French dessert that will blow you away. The method is super simple and quickly comes together in your blender or food processor. The outcome is fluffy and delicious. The cherries, once baked, become super juicy and burst in your mouth with flavor. It was really difficult not going in for seconds with this recipe.

I love the cherries here and used a Cherry Pitter from Amazon to quickly remove the pits. If you don’t have cherries, you can sub in berries instead. If you don’t have heavy cream, use kefir, buttermilk or more milk.

Ingredients

  • 2 tbs unsalted butter
  • 3 cups cherries, stemmed + pitted
  • 3 eggs
  • 1 cup milk of choice
  • 1/4 cup heavy cream (or kefir)
  • 1/2 cup granulated sugar
  • 1/2 cup all purpose flour
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract (optional)
  • Garnish: powdered sugar

Instructions

  • Preheat oven 375℉. Melt the butter in a 10 inch oven proof skillet in your oven. Swirl the butter around to coat the sides. Place the cherries in the skillet in an even layer. Set the pan aside.
  • To a blender or food processor, add the eggs, milk, heavy cream, sugar, flour, salt, vanilla, almond extract and pulse until combined. Pour the batter over the cherries. Optional: sprinkle some more sugar on top and bake for 40-45 minutes or until set and golden brown and a toothpick comes out clean. Allow to cool for 30 minutes prior to slicing.
