You’ve seen these cute little fingerling potatoes in the grocery store, haven’t you? For the longest time, I’d look at them, wanting to put them in my cart, but I didn’t have any particular recipe in mind to use them for.

What are Fingerling Potatoes?

Fingerling potatoes are a miniature potato with an oblong shape. They come in a variety of colors and sizes and have thin skin and a creamy texture.

How to Roast Potatoes in the Oven

One of my favorite ways to prepare any kind of potato is to roast them, so it seemed like an obvious choice to roast these fingerling potatoes. Here is a brief overview of how this roasted potato recipe comes together. For the full recipe including all measurements, scroll to the recipe card at the bottom of the post.

  1. Prepare your potatoes. Scrub them to remove any dirt and debris and then cut the potatoes in half and place them on a baking sheet. Toss them with olive oil and seasonings.
  2. Bake the potatoes. Roast until tender, about 25 minutes. You can check them by poking them with a fork. Enjoy!

Seasoning Variations

You can change up the seasonings in this recipe however you’d like — I love using salt, pepper, garlic powder, and smoky paprika. Feel free to use whatever you have on hand and keep it as simple or as complex as you’d like. They’d also be very delicious seasoned simply with salt and pepper. Make sure to flip the potatoes halfway through roasting so that they cook evenly.

Do I need to peel the potatoes first?

Nope! This easy potato recipe can be enjoyed with the skins on. They provide texture, nutrients, and get crispy. The best part is the time you save in not having to peel them like other other potato recipes!

Is it necessary to boil potatoes before roasting?

In some recipes, like my smashed potatoes, I recommend boiling the potatoes before roasting them. In this recipe, boiling the potatoes first is not needed. They will fully cook in the oven.

Can I make this recipe in the air fryer?

Yes! Make sure to spray the basket of your air fryer with nonstick cooking spray and allow it to preheat before adding your potatoes.

How to Serve Roasted Potatoes

Easy Oven Roasted Fingerling Potatoes work so well with beef, chicken, pork, and just about any other main dish you can think of. Miles, my 3 year old, loves kielbasa sausage, so I made these potatoes to serve alongside sausage and another of his favorites, corn on the cob. It was a super simple dinner that was ready in about 30 minutes with very little hands-on work. Serve with ketchup and enjoy!

Storing and Reheating Leftovers

Store any leftover roasted potatoes in an airtight container in the refrigerator for up to three days. Reheat them in the oven or air fryer until warm.

Ingredients

  • 1 1/2 lbs fingerling potatoes
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika regular paprika is fine too

Instructions

  • Preheat oven to 425 degrees Fahrenheit.
  • Wash fingerling potatoes.
  • Cut the potatoes in half length-wise.
  • Toss the potatoes with 2 tablespoons olive oil, 1/2 teaspoon salt, 1/2 teaspoon black pepper, 1/2 teaspoon garlic powder and 1/2 teaspoon smoked paprika.
  • Place the potatoes on a rimmed baking sheet and bake for 20-25 minutes, until tender, making sure to flip the potatoes halfway through baking.
