Lighter Strawberry Cobbler

This is the ideal summer brunch dish your friends and family with devour!

This Strawberry Cobbler recipe is super simple to throw together in minutes. My only advice is to make it and let it set completely prior to serving it. The cobbler tastes so much better even the next day!

This recipe was inspired by my friend Kat Ashmore, when she posted, it looked so good, I knew I had to try it!

Lighter Strawberry Cobbler

  • 8×8 inch square baking dish


  • 3 tbs unsalted butter
  • 3 cups diced strawberries
  • 2 tbs sugar
  • 1 cup all purpose flour
  • 1/4 cup almond flour
  • 1/3 cup sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup milk
  • 1 tsp vanilla extract

  • Preheat your oven to 375℉. Place all of the butter in an 8×8 baking dish and place the dish in your oven until the butter melts. Remove from oven and tilt the dish in all angles to butter the sides and bottom of the dish.
  • In a small bowl, toss your diced strawberries with 2 tbs sugar and set aside.
  • In a large bowl, whisk together the flours, 1/3 cup sugar, baking powder and salt. Pour in the milk and vanilla and mix to combine. Pour the batter into the baking dish and DO NOT MIX IT – leave as is. Next add the macerated strawberries evenly to the baking dish. Bake for 40-45 minutes or until golden.
  • Allow the cobbler to cool COMPLETELY for best results! We enjoyed it best the next day.
