Quick Crunchy Baked Chipotle Beef Tacos

A fast and delicious dinner you will turn to every week!

A fun weeknight dinner the whole family can enjoy! My kids always ask me to make them these tacos. You can use ground beef or ground chicken or turkey as well. The tortillas can be low carb, flour or corn!

Our favorite part of these tacos are definitely the crunchy shell and cheesy beef. With just one extra step, you get that crispy exterior shell that levels up the dish. The cheesy beef is incredible too! Use any cheese you prefer, like mozzarella or cheddar.

The perfect accompaniments for this recipe is some pico de gallo and some guacamole for spreading. I love to finish this with chopped cilantro and lime wedges.

Equipment

  • extra large sheet pan

Ingredients

Filling:

  • 2 lbs ground beef
  • 1/2 tsp chipotle powder
  • 1 tsp each paprika, garlic powder, onion powder, dried oregano
  • 1/3 cup low sodium chicken broth
  • 1 tbs lime juice
  • cups shredded mexi blend cheese (divided)

Assembly:

  • 8 medium flour tortillas (or corn tortillas)
  • 1 tbs olive oil
  • guacamole
  • pico de gallo
  • lime wedges
  • chopped cilantro

Instructions

  • Preheat your oven to 425℉. Line an extra large sheet pan with parchment paper.
  • Heat a large deep skillet to medium high and add the ground beef to the pan. Using a wooden spoon, break up the meat until its no longer pink – about 5-7 minutes. Use a paper towel to soak up any excess fat from the pan. Season with the spices listed above and pour in the chicken broth. Mix to combine. Cover the pan and lower the heat. Allow 4-5 minutes to soak up the broth. Next add in the juice and mix in 1 cup of the cheese into the meat until melted.
  • Add about 1/3 cup of the ground beef mixture to each tortilla half, sprinkle with a little more cheese and fold over. Repeat for all 8 tortillas. Brush the tops of tacos with olive oil and bake until crispy and golden brown – about 5-10 minutes. Serve immediately.
  • Serve with guacamole, pico de gallo and lime wedges.

Notes

Use corn tortillas to make this recipe Gluten Free!
You can use any type of ground meat here like chicken or turkey!
You can use any type of shredded cheese, like cheddar or mozzarella.
