4 Ingredient Carrot Bread (Vegan + Refined Sugar Free)

A quick and delicious snack bread that you can always count on in a rush. Crusty on the outside and soft on the inside – we love it!

This is a delicious and easy bread to make in a pinch with just some self rising flour, applesauce, cinnamon and finely shredded carrot. With only four ingredients you cannot go wrong. The bread has an amazing crusty exterior and a soft and yummy interior. Its slightly sweet with just the unsweetened applesauce as a sweetener. This is perfect for something to snack on or for a quick breakfast with some honey and tahini!

If you don’t have self rising flour, you can make you’re own homemade self rising flour as outlined in the recipe box below. I added walnuts in mine and loved the crunchy texture. Toss in raisins or chopped dates for some added sweetness.

Equipment

  • 9×5 inch loaf pan

Ingredients

  • 3 cups self rising flour
  • 1 tsp cinnamon
  • 2 cups unsweetened applesauce
  • 3/4 cup thin shredded carrots

Optional Add Ins:

  • 1/2 cup chopped walnuts
  • 1/3 cup raisins or chopped dates
  • 1/4 cup granulated sweetener of choice

Instructions

  • Preheat oven to 375℉. Line a 9×5 inch loaf pan with parchment paper.
  • For HOMEMADE Self Rising Flour: 3 cups all purpose flour + 4½ tsp baking powder + 3/4 tsp salt. Whisk together until combined.
  • In a large bowl, using a rubber spatula, mix self rising flour, cinnamon and applesauce until fully incorporated. Fold in the carrots (and any additional add ins you chose; I only added in walnuts to mine). Transfer the batter to your loaf pan and flatten out evenly. Bake for 50-55 or until toothpick comes out clean. Allow to set in pan for 5 minutes then transfer to a wire rack to fully cool prior to slicing.

Notes

Make sure you do not exceed the 3/4 cup carrot shreds because that will make the bread wet and not cook through properly.
